Make rainbow cloud biscuits for Pride

- 100g (3 1/2oz) unsalted butter, room temperature
- 60g (2 1/4oz) icing sugar, sifted
- 2 egg yolks, room temperature
- 2 teaspoons vanilla bean paste
- 125g (4 1/2oz) plain all-purpose flour
- 1/8 teaspoon each of red, orange, yellow, green, blue and purple gel food colouring
- 60g (2 1/4ox) white chocolate, chopped
- 1 teaspoon rainbow sprinkles
Before you start
Make sure you have clean hands, a clean work surface and a grown-up to hand to help you with the oven.
How to make rainbow cloud Viennese biscuits
To start, preheat the oven to 180掳C (350掳F)听Make sure you grab a grown-up whenever you are using an oven!听Then grease a baking tray with a little bit of butter and line it with some baking paper.
Place the butter in a large bowl and add sugar a tablespoon at a time. Mix together until pale and creamy and the sugar is fully incorporated.
Once light and creamy, mix in the egg yolks and vanilla.
Sift in the flour and gently mix until all the flour is combined.
Divided the dough into six bowls for all the colours of the rainbow and add a different food colouring to each bowl. Mix the colour with the dough until you have a smooth bright dough.
When you're happy with the colours of the doughs, open a piping bag and spoon lines of the different coloured doughs vertically on the inside of the bag in rainbow colour order. If you don't have a piping bag you can use a freezer bag with a hole in the bottom.
When all of the colours are added, attach a star nozzle to the bag and pipe four large rainbows, with a cloud at each end, onto a baking tray for your biscuit! Don't worry if you don't have a nozzle, just carefully pipe out the dough using your freezer bag.
Put the biscuits in the freezer for 15 minutes.
Remove from the freezer, grab your grown up and bake for 12 minutes. When cooked transfer to a wire rack to cool down.
Get started on your white chocolate clouds whilst they cool.

How to Make White Chocolate Clouds
Break up the white chocolate into small chunks and put into a microwaveable bowl and heat up the white chocolate on high in 15-second bursts, stirring after each burst, until melted.听Make sure you grab a grown-up here, the bowl and the chocolate will be HOT!
Once the rainbow biscuits are cool, place on wire rack with a sheet of baking paper underneath to avoid any mess.
Pour the white chocolate to cover the clouds at both ends of each rainbow. Then scatter over the听 sprinkles and leave to set.
Store up to five days and enjoy!听

To make this recipe vegan friendly
Swap eggs for two mashed bananas, or four tablespoons of chickpea juice.
Swap butter for vegetable spread听and use vegan chocolate.
