Preparation

The most important component of Bombay mix, chickpea flour noodles (sev), are made from a laborious process involving a special perforated brass utensil known as a seviya. A thick mixture of chickpea flour, oil, spices (such as asafoetida) and water is passed through the utensil straight into vats of hot oil to fry. Ready-made sev are available from most Asian grocers.
