Carl Clarke began his cooking career at the age of 15, having run away from Birmingham intending to go to France, but ended up on a boat to Jersey.

After working as a chef in hotels, the military and a luxury department store, he started a pop-up restaurant business, which includes Rock Lobsta, God Save the Clam and Disco Bistro.
