Brussels sprouts with toasted almonds and bacon
This is a great way to serve sprouts. It would make a lovely side dish for the Christmas Day turkey or with cold cuts on Boxing Day.

Ingredients
- 4 slices smoked or unsmoked streaky bacon, roughly chopped
- 1 banana shallot, thinly sliced
- 2 garlic cloves, crushed
- 250g/9oz Brussels sprouts, finely shredded
- 30g/1oz toasted almonds, roughly chopped
Method
Heat a frying pan over medium heat and fry the bacon until crisp. Transfer to a plate lined with kitchen paper to drain.
Add the shallot and garlic to the pan and cook for 2 minutes, until soft. Add the sprouts and cook for 3-4 minutes, until wilted, stirring occasionally.
Return the bacon to the pan, add the almonds and cook through for 2 minutes. Serve immediately.
