Haricot, herb and ricotta dip
Simplicity itself. This fresh-tasting ricotta dip is a great vegetarian starter along with slices of carrot and breadsticks for dipping.
Ingredients
- 400g/14oz can haricot beans
- 20²µ/¾´Ç³ú fresh coriander, chopped
- 15²µ/½´Ç³ú mint, chopped
- 200g/7oz ricotta
- 3 tbsp olive oil
Method
Lightly crush the beans with a potato masher in a large mixing bowl.
Fold the beans together with the chopped herbs and the ricotta, without over mixing.
Trickle over the olive oil and serve.
