8 Jersey Royal potatoes, boiled and chopped
10 beetroot, peeled and grated
½ cucumber, diced
1 tbsp chopped fresh dill
8 radishes, stalks on, quartered lengthways
1 tbsp chopped spring onion
1 tbsp chopped fresh tarragon
1 bay leaf, crumbled
few black peppercorns, roughly crushed
2 tbsp raw honey
1 tbsp sea salt flakes
8 cooked crayfish tails
8 soft-boiled quails’ eggs, peeled and halved
chunk sourdough bread (rye sourdough would add an extra kick)
