Heritage British fish and heritage tomatoes combine in this fresh-tasting dish that celebrates special, seasonal ingredients.

You will need a food processor or blender and a muslin cloth to make this recipe.

Ingredients

  • 10 ripe tomatoes, roughly choppedÌý
  • 5cm/2in piece ginger, peeled and slicedÌý
  • 1 garlic clove, peeled and crushed
  • 15g/½oz fresh basilÌý
  • 1 tsp pink peppercornsÌý
  • 1 side trout, ideally chalk streamÌý
  • dash oil
  • salt, to season
  • 6 heritage tomatoes, different colours, thinlyÌýsliced
