Summer fruit recipes
Summer fruit usually describes a mixture of summer berries, typically, blueberries, blackberries, strawberries, raspberries, redcurrants and blackcurrants. However, summer berries can also include loganberries, bilberries and boysenberries.

Mixed summer fruit is sold frozen all year. Otherwise, mix your own individual fruits as and when they鈥檙e at their best.
Preparation
To highlight the flavour of a particular fruit in a summer berry mix, add that fruit鈥檚 eau de vie or liqueur. For example, bring out the flavour of currants with cr猫me de cassis, or the taste of strawberries with eau de frais.
Frozen summer berries release lots of juice when defrosted so are best in cooked dishes. If cooking defrosted berries in a comp么te (at room temperature or cold), thicken the sweetened excess juice with a little arrowroot. If using them in a pie, thicken the juice with cornflour.
