Farmhouse Cider Cake from Mother to Mother by Lisa Faulkner
Serves 8-10

Ingredients
350g self-raising flour
pinch of salt
175g demerara sugar
175g unsalted butter
275g mixed dried fruit
grated zest of 1 orange
1 large egg, beaten
150ml dry or sweet cider
2 tsbp good quality marmalade (any kind you like, with rind or without)

Method
- Heat
the oven to 180掳C/gas 4. Grease and line a 20cm round cake tin with baking
parchment.
- Sift
the flour and salt into a mixing bowl, stir in the sugar and rub in the butter
with your fingers until it resembles breadcrumbs. If you don't want to do this
by hand, you can use a food processor.
- Stir
in the dried fruit and orange zest, then make a well in the centre and add the
egg, cider and marmalade. Stir well and pour into the prepared cake tin.
- Bake in the oven for 50 mins, then lower the heat to 150掳C/gas 2 and bake for a further 15 mins or until a skewer inserted into the centre comes out clean. Leave to cool in the tin before slicing.
