Salmon with white chocolate sauce
Freeman鈥檚 Bay Pinot Gris, New Zealand, 2019
Aldi, 拢5.99
This is the Pinot Grigio grape just under another name and with more meat on its bones. Style-wise, there鈥檚 quite a lot more going on compared with your average glass of PG. From the relatively warm Gisborne region on New Zealand鈥檚 North Island, this is nicely aromatic with passion fruit and mango and what feels like a bit of sweetness, like really ripe fruit. There鈥檚 a tiny touch of Chardonnay and a splash of the aromatic Gew眉rztraminer grape in there too. Its just off-dry style sits brilliantly with the sauce - not too sweet, not too sharp.

Finest Pedro Xim茅nez, Spain

Made by one of Spain鈥檚 most famous sherry producers, Gonzales Byass. Pedro Xim茅nez grapes are laid out to dry in the sun for 2-3 weeks so the water in the grape evaporates leaving lots of concentrated natural sugars.聽 They鈥檙e then pressed, vinified and fortified before being aged in the famous sherry solera system in American oak butts. Taste-wise, think alcoholic fig juice with chocolate, caramel and raisins. Perfect with the flavours of the dish, serve it lightly chilled. If you can鈥檛 get hold of PX then try this with a splash of Ruby (cheap) or Vintage Port (not so cheap), or even something like Maury, a fortified red wine from Southern France that tastes like something halfway between red wine and port. Gorgeous with any dark chocolate.
