This white has all the scent and vibrancy to work with the bigger flavours in the recipe such as the meaty mussels. Made by Mike Robustelli, an ex-American football player, rodeo turned winemaker, in a hot region on the west coast relying on the snowmelt form the Sierra Nevadas for irrigation. The result on the wine is big concentration and lovely lush fruit - Viognier is classically mellow which makes it spot on with coconut milk. For a widely available alternative go for a rich oaky Californian Chardonnay.

Bargain of the moment, if you like Sauvignon Blanc, you’ll love this lesser known Vermentino. Made in St Chinian famed for its reds, this captures the sunshine of the Languedoc with the freshness of the seaside and it’s that freshness that makes it pair so well with light white cheeses. If you can’t find Vermentino (most supermarkets have got one these days), Sauvignon Blanc will sort you out.
