A trip to Kent inspires a nutty addition to Marcus's Sussex smallholding, and he gets a lesson in perfecting compost.

Marcus develops plans to add a regional Sussex staple, nut trees. Jumping over the border to Kent, he discovers the cobnut, a kind of cultivated hazelnut, and gets tips and tricks on growing his own.

Back at the smallholding, the raspberry bushes are in full bloom, so he gets a helping hand harvesting before turning some of it into a special vinegar that will see him through the winter.

Once his new trees arrive, Marcus celebrates with a feast of a nutty version of Eton mess, a British classic.

Marcus next makes a trip to Hampshire that gives him an insight into the key of all good growing, compost, before he develops his own compost back at the smallholding.

A glut of plums leads to a delicious jam that can be shared with the community, and with the orchard heavy with ripe fruit, Marcus invites the local producers in to share their wares with one another while collecting some of his produce. As the year-round plans take root, Marcus cooks up a feast to celebrate with the people who have helped him along the way.
