The winkle
If there鈥檚 one native shellfish that has been undervalued more than any other in the 21st century it has to be the winkle.
For thousands of years, they supplied our countrymen with a valuable and appreciated source of fast food. Right through the post war years they were still a very popular form of grub. Sadly, over the last few decades the world of gastronomy appears to have turned its back on this humble little gastropod.
