The Ark of Taste: Bottarga
This is the story of Bottarga; salted and cured egg pouches extracted from Mauritanian mullet. Caught by the nomadic fishermen of the Imraguen tribe, the fish eggs are then prepared by Imraguen women - a process which requires great skill and delicacy. While industrial fishing practices have threatened the local economy of this coastline, the revival of Bottarga has enabled it to thrive once again.
