Skyr is a fermented cheese which has been an essential survival tool for Scandinavian communities who live and work in some of the most extreme environments in the world. Made from the milk of cows, goats, mares or sheep, this cheese differs in flavour depending on the fauna of the season.
Dan Saladino looks at how one Icelandic woman is striving to keep this traditional cheese alive since its gradual decline in production due to the modernisation of farming.
