Researchers are aiming to produce a new type of bread that is just as nutritious as wholemeal but looks and tastes just like a white loaf. The aim is to bring health benefits to the vast majority of the population who love their sliced white loaves.

Scientists at Aberystwyth University are carrying out detailed analysis of the nutritional value of the new breads. They are working with Shipton Mills, in Gloucestershire, to produce loaves made from different mixes of wheat varieties, pulses and cereals. They hope to have their nutrition-boosted bread on the supermarket shelves in two years’ time.
