Airson an t-siorap
1 cupan siùcar gràinneach
1 cupan bùrn
2 ainis-rionnagach, 1 pònair faoineig, 2 phìos caineil, 2 chlòbha

Ann am pana beag, measgaich an siùcar, am bùrn, na pìosan caineil, clòbhan, ainis-rionnagach agus an fhaoineag.

Thoir an t-siorap gu ìre goile agus leig leis goil gus a bheil an siùcar air leaghadh.

Aon uair ’s gu bheil an siùcar air leaghadh, thoir an t-siorap far an teas ach fàg na spìosraidhean ann gus leigeil leotha tarraing airson 10 mionaidean fhad ’s a tha an t-siorap a’ fuarachadh.

Thoir na spìosraidhean às an t-siorap agus dòirt ann an cnogan agus cùm san fhuaradair gus a bheilear deiseil airson a chleachdadh.

Airson an oraindsear tioram
Geàrr an t-oraindsear na shlisean thana agus cuir ann an soitheach air a lìnigeadh le pàipear.
Cuir ann an àmhainn theth agus leig leotha tiormachadh.

Airson nan dearcan-fraoich siùcarach
½ cupan dearcan-fraoich reòite
2-3 spàinntean-beaga dhen t-siorap, gu leòr airson nan dearcan-fraoich a chòmhdach
1-2 spàinn-mhòr siùcar

Cuir na dearcan-fraoich ann am bobhla agus còmhdaich leis an t-siorap. Dustaig le siùcar, a’ dèanamh cinnteach gu bheil gach dearc-fraoich le còmhdach de shiùcar.
Cuir air truinnsear agus fàg san fhuaradair gus a bheilear deiseil an cleachdadh.

A’ cleachdadh crathadair dighe, measgaich sùgh nan dearcan-fraoich, an sùgh seadaige, an sùgh liomaideige, an t-siorap, an tequila agus crath e.
Dòirt ann an glainne agus lìon le deigh, a’ lìonadh a’ chòrr dhen ghlainne le bùrn balganta.
Sgeadaich le geug ròs-Mòire, sliseag oraindsear tioram, pìos caineil agus na dearcan-fraoch siùcarach.

SPICED PALOMA COCKTAIL

2 parts cranberry juice
4 parts grapefruit juice
Splash of lime juice
1 part spiced sugar syrup
3 parts tequila
1 orange
Ice cubes
Sparking water

To prepare the syrup
1 cup granulated sugar
1 cup water
2 star anise, 1 vanilla bean, 2 cinnamon sticks, 2 cloves

In a small saucepan, combine the granulated sugar, water, cinnamon sticks, cloves star anise and vanilla bean.
Bring the syrup to the boil and continue boiling until the sugar has dissolved.
Once the sugar has dissolved, remove the syrup from the hob but keep the spices in the syrup to allow them to infuse for 10 minutes while the syrup is cooling.
Remove the spices from the syrup and pour it into a jar and store in the refrigerator until ready to use.

For the dried orange
Thinly slice the orange and place on a baking tray that you’ve lined with parchment paper.
Place in a hot oven and allow them to dry.

For the sugared cranberries
½ cup of frozen cranberries
2 – 3 tsp of sugar syrup, enough to cover the cranberries
1 – 2 tbsp sugar

Place the cranberries in a bowl and coat with sugar syrup. Then dust with sugar, making sure all the cranberries have a coating of sugar.
Place them on a plate and refrigerate until you are ready to use them.

Using a cocktail shaker, combine the cranberry juice, grapefruit juice, lime juice, syrup and tequila and shake.
Pour into a glass and fill with ice and top off the remainder of the glass with sparkling water.
Garnish with a sprig or rosemary, slice of dried orange, cinnamon stick and sugared cranberries.
